NO BAKE COCONUT ALMOND PROTEIN BARS I got the idea for this from Oxygen magazine but kinda put my own twist on it because I love the way almond and coconut taste together. You could also use natural peanut butter and omit the coconut. Ready in about 40 minutes Yields 8-9 Servings INGREDIENTS: 2 cups oats 1/2 cup natural almond butter 4 scoops vanilla or chocolate protein powder 1 tbsp ground flaxseed (optional) 1 tbsp coconut flakes 1 tbsp sliced almonds 1 tbsp dried cranberries 1 tbsp raisins About 1/2 tbsp honey 1/2 cup water 9x9" square baking dish or 8-8.5" round dish DIRECTIONS: 1. Knead all ingredients (except honey) in a large bowl with hands. 2. Spread dough into dish using a spatula to flatten and smooth the surface. 3. Drizzle honey over dough, then place in freezer. 4. Freeze for about 30 minutes, then cut into bars. I usually cut and wrap each bar individually so I can just grab and go. Keep in mind that these bars are calorie-dense, so they would serve well as a single snack, or if you eat 6 meals a day, as a meal not a dessert. I like to eat one for breakfast.The fat content is high but remember that natural nut butters contain "healthy" fats.
